EMMENTALER

Originally, Emmental is a Swiss cheese. Nowadays, the cheese is also produced outside of Switzerland, and DOC (Dutch Original Cheese) in Hoogeveen is one of its producers. Switzerland is no longer the biggest producer of Emmental cheese, but a remarkable difference is that the the Swiss production process always uses raw milk for the production of Emmental cheese, something that is not done when the cheese is produced elsewhere.

The biggest characteristic of Emmental are the ‘eyes’, the large holes (10 – 25mm diameter) that are the most recognisable element of the cheese. These holes are created by a culture of propionic acid bacteria that are added during the production. The cheese has a sweet and nutty flavour.

Cheese loafs

Kraats Kaas has three types of cheese loafs in its product range. These are made with Gouda 48%, Edam 40% and Emmental 45%. They are packed 4 x 3kg per box.
